30 for 30 Remix: Days 16 & 17

Dude... I am so many outfits behind!!  My bad!  I really couldn't focus on a blog for a minute there.  I was going crazy!  LAST WEEK OF CLASSES!!!!!!!!!!!!!!!!!!!!!!!!!  I COULD NOT be more ready for this semester to end.  COULD. NOT.  Since I'm behind, I'll double up for a couple of days.  There are some rather amusing poses ahead!  Zoolander who??

Vegetable Curry & Rice with Oven-Fried Chicken

Curry and rice recipe courtesy of Suite 101... whatever that is...

Vegetable Curry

  • 1 large eggplant
  • Cooking oil
  • 3 cloves garlic, crushed
  • 1 large onion, diced
  • 2 medium zucchini squash, diced
  • 1 yellow crookneck squash, diced
  • 10-12 mushrooms, sliced
  • 1 green pepper, diced
  • 1 28-ounce can diced tomatoes
  • 3 tablespoons Dhana Jeera (cumin-coriander powder)
  • 2 tablespoons curry powder
  • Salt to taste
To prepare the eggplant, peel and cut into ½-inch cubes. Place eggplant cubes on a sheet of paper towels and salt generously. Set aside. In a large skillet, heat some cooking oil and add garlic, onion, green pepper, zucchini squash and yellow squash. As vegetables begin to cook and become reduced, add mushrooms, then eggplant cubes, stirring and adding as space in the skillet allows. Add oil as needed. Add canned tomatoes with juice, Dhana Jeera, and curry powder. Cook over low heat for about 20 minutes, stirring frequently. Add salt to taste. Serve over rice.

Rice

Heat 1 tablespoon cooking oil in a large skillet. Add 1 cup basmati rice and cook over medium-low heat, stirring to distribute oil over rice, about 5 minutes. Add 2 cups water. Bring to a boil. Cover and reduce heat to low. Cook for 12 minutes for al dente rice and 15 minutes for softer rice.

Results: Yummy!  And I know it'll be even better tomorrow!  I had eggplant, squash and mushrooms I needed to use so I googled those ingredients and found this!  Yum!  I added about a tbsp. of turmeric each to the rice and curry.  I also added one whole black cardamom pod to the rice.  A taste of India!

Oven-Friend Chicken
2 pounds of chicken
2/3 cup Bisquick
1 1/2 teaspoons paprika
1 teaspoon Italian seasoning
1 1/4 teaspoons salt
1/4 teaspoon pepper
Heat oven to 425°F. Stir together Bisquick, paprika, salt and pepper; coat chicken. Place chicken in pan.
Bake uncovered 35 minutes.
Turn; bake about 15 minuets longer or until juice of chicken is no longer pink when centers of thickest pieces are cut.
Results: I added 1 tbsp. of garlic powder as well. There wasn't enough salt, but this was still pretty tasty.

HALFWAY!!!!!  So how did I celebrate?  With a boring outfit... but some very amusing shot series.



 Now in the next series, I paused for a minute to think about my next shot and the bf Rashan thought I was posing... ROTFL!!  Really???  That awkward face and stance makes you think, "Hot. Got it."  LOLOL.  So!  I took two more.  Here goes nothin...

Spaghetti with Oven Baked Clams

How long has it been since I posted a recipe???  Geez!  The remix has hijacked my blog!  I promise I haven't been cooking much anyway.  This recipe is courtesy of Tyler Florence.
  • 40 littleneck clams, well scrubbed
  • 1/4 cup extra-virgin olive oil, plus more for drizzling
  • 10 garlic cloves, smashed with the back of a knife
  • 1/4 pound pancetta, small dice
  • 2 dried red chiles
  • Handful fresh basil leaves
  • 1/4 cup white wine
  • 2 pints cherry tomatoes,(yellow and red), stemmed
  • Freshly ground black pepper
  • 1 pound spaghetti
Preheat the oven to 400 degrees F.
Bring a large pot of salted water to a boil. Meanwhile, scrub the clams with a stiff brush under cold running water and discard any that are open. Put a medium roasting pan over 2 burners.
Add the olive oil, garlic, pancetta, chiles, and herbs and cook until the pancetta renders, 3 to 4 minutes. Add the clams, the wine, tomatoes, and a good amount of pepper and toss that all together. Transfer pan to oven and roast until the clams open, about 10 minutes. While the clams are cooking, drop the pasta into the water for 7 to 8 minutes. Drain. Dump the drained pasta into a serving bowl, and toss with clams. Garnish with fresh basil leaves, freshly ground black pepper and a drizzle of extra-virgin olive oil.

Results: This is the last time I'll be using cherry tomatoes.  Ever.  These tasted literally like garbage to me.  I know it's not tomato season but that is unacceptable.  I have officially stopped trying to make fetch happen.  Other than that, this was quite tasty.  Rashan had his common complaint: not enough sauce.  He's not past his sauce addiction and has no desire to ever get there.

I should really just tell you guys to assume the shoes are Nine West unless otherwise stated!  I know the pics are a bit dark and the angle repetitive but this is what you got since my photog was AWOL. I DID NOT GIVE YOU LEAVE!!  This was a simple going to class outfit.  Blazers and jeans used to be my work uniform when I worked at a tv station.  And yes, K. Rock, I'M WEARING A SWEATER TANK!!  *faints*  GIVE HER ROOM!! SOMEONE GET SOME WATER!!  I'm getting kind of bored with this challenge.  I kind of feel like I have 2 more interesting outfits left.  Lol.  I know that's awful.

I rocked this outfit to church Sunday for my sorority's 88th anniversary.  Love it!  I stole the wrap covered with a belt idea from Sydney!  I wore a take on this before the remix to my film screening.
The tights are giving me love!  And a good hat????  What??  Love.  And those are good cheap sale tights.  Mmhmm.

30 for 30 Remix: 7 & 8

What?  That title's not clever enough for you?  Ah well.  Bet you'll still look at the pictures!  I wore two outfits on Saturday.  THE KID'S ON A ROLL!!!  The first for errands, the second to go to dinner.  The first, I dig and LOVE the location!  The second... wow... SO not my style.  And I kind of hate it.  I had this AWESOME outfit... then I remembered I couldn't wear the sweater because it's not in my 30.  Kick me in the face, please.  I might have to stop trying to make this dress happen.  One more chance after this... (never kick a good dress when it's down)




 Oh dear second outfit.  Here you come ruining this post...
